Project Profile: Alcohol-free fermentation beverage is a drink made from the characteristic resources of grape and other berries in Ningxia which is the raw wine with lower ethanol content obtained by yeast fermentation with low ethanol yield obtained through microbial breeding. Through biological and physical methods, the alcohol in the original wine is removed, and the technological conditions and parameters for the preparation of alcohol-free fermented beverage are formed by the combination of microbial control fermentation and physical dealcoholization. The alcohol content is less than 0.5%, and it has the characteristics of typical fermented drinks. It not only retains the nutritional value of berries, but also increases the metabolites of microorganisms, which offer delicious taste and could meet the needs of special consumers.
